  • Mix all ingredients, high speed 10min + -

Coconut Butter Cookies

  • Meringue premix: 100g
  • Water: 75g
  • Sugar: 45g
  • Mix all ingredients, high speed 10min + -
  • Flour: 30g
  • Salted butter: 85g (Melted)
  • Desiccate Coconut: 180g
  • Add flour, butter and coconut.
  • Pipe and bake
  • Baking temperature 160c/150c

Italy Meringue Butter Cream

  • Sugar: 200g
  • Water: 60g
  • Cook to 112c
  • Meringue premix: 100g
  • Water: 75g
  • Whipped and add hot syrup in low speed.
  • Cold salted butter (chop) 650g.
