- Mix all ingredients, high speed 10min + -
Coconut Butter Cookies
- Meringue premix: 100g
- Water: 75g
- Sugar: 45g
- Mix all ingredients, high speed 10min + -
- Flour: 30g
- Salted butter: 85g (Melted)
- Desiccate Coconut: 180g
- Add flour, butter and coconut.
- Pipe and bake
- Baking temperature 160c/150c
Italy Meringue Butter Cream
- Sugar: 200g
- Water: 60g
- Cook to 112c
- Meringue premix: 100g
- Water: 75g
- Whipped and add hot syrup in low speed.
- Cold salted butter (chop) 650g.
